Baby Zucchini Salad


  • 5 baby zucchini thinly sliced
  • 1/2 red onion thinly sliced
  • 1 red bell pepper diced
  • 2 leaves fresh basil minced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt and pepper to taste


  • Toss the zucchini, onion, bell pepper, and basil together in a large bowl.
  • Drizzle the olive oil and balsamic vinegar over the mixture and toss again to evenly coat.
  • Season with salt and pepper to serve.
